Good Healthy Eats!–The Farmer’s Wife 

Cauliflower Soup

If you are looking for something to do with that large head of Cauliflower you have in your fridge, here is an idea:  Cauliflower Soupvery simple and very good…I have leeks for sale, but you can substitute white onions.  This recipe uses the blender, but an immersion blender works, too…and I’ve even used the food processor, though you have to be careful you don’t fill it over the liquid line.  (Recipe is posted at http://www.lloydcraftfarms.com , Recipe tab, Recipe #62.)  

Cauliflower is in the Brassica family–high in antioxidants, and a great veggie for health.  I always buy a case to sell for Extra’s at Buyer’s Group!  Cauliflower, with Broccoli, is said to have anti-cancer properties, and is nutrient dense…A good prebiotic to feed your growing fauna in your healthy gut.  Taking probiotic supplements is of little value if you can’t keep them thriving and balanced.

Remember: raw, steamed, broiled or grilled, boiled…that’s the order to think in terms of the most nutrition.  Raw–fresher the better…Steamed, grilled, or broiled makes veggies easier to digest and you aren’t sacrificing a ton of nutrients that leach out in the water when boiled…if boiled, drink the water or hold it for soup liquids.  

If you can’t eat it raw, then frozen, dehydrated, pickled, canned is the order of processing to retain the most nutrition.  We can’t always have everything raw…and wouldn’t that get a little boring…so we look to freeze, dry, pickle, or can it so we can enjoy it later and have something through the winter months–  🙂

All items except Avocados and Citrus are USDA certified organic, or organically raised by us.  Avocados, oranges, grapefruit, and lemon quality has not been good from the organic section.  I refer to the Dirty Dozen List put out by the Environmental Working Group when buying non-organics.  If you are juicing citrus with the peel, let me know and we can order organic–peel is where the chemicals are pooled. In addition to the items posted for sale yesterday, we also have MUSHROOMS, Portabell0’s perfect for no-meat burgers.  We have Alpine Daikons, Watermelon Radishes, and Mangoes for those with a spirit of adventure!  And also Meyer Lemons, and Grapefruits for a good shot of Vitamin C to fight the cold–

The Fresh Express truck did not make the connection in Spokane, so no Salad Mixes or Spinach.  Also, I sent the parsnips back to the company–quality not good!  Will keep searching for the fresher parsnips–those packaged shortly after harvest to maintain moisture.

Administrator’s Special will be $22 instead of $25 as no Salad Mix–

We will NOW be at Bee Healthy EVERY Wednesday!  The Buyer’s Group has been split–Members are either Group A or Group B.  If you have not heard from me and you picked up January 4th, you are Group A.  (12 people were moved from Group A to Group B and they know who they are–)  If you just signed up this week you are Group B.  If you have any questions–Confused?  CALL ME-   431-1219
