Brassica’s! You’ve got them this first week— Brassica’s! Family of broccoli, cauliflower, kohlrabi, cabbages, and radishes! Yes, radishes!…distant relative…but let Brassica’s get heat stressed and the radish flavor comes through!
This week’s Brassicas are 2 kinds of mini-broccoli AKA broccolini, Happy Rich and BC2611. And a bag of cut-up broccoli and cauliflower. (What to do with 14 heads and 16.6 pounds—)
Store in cold refrigerator protected from refrigeration damage (plastic bag). Eat steamed, boiled, grilled, roasted, or raw if you must. Cook Broccolini with the leaves on. My fav is cooked in the cast iron skillet (steam first with a bit of water to tenderize, then add olive oil and season), with steamed as my second choice.
Summer squash is zucchini, Zephyr (yellow with Green tip), Costa Romanesco (striped zucchini heirloom). Wash first…a little gritty from a midnight rain that splashed up dirt onto the plants. We do not normally wash your veggies as it introduces moisture which shortens their life span and can introduce bad bacteria. Veggies have a protective coating—as a general rule, wash before use.
Snack cucumbers, AKA Harmonies, European Picklers. One of our favorites: good small to large (any size), no bitter tough skin (thus ‘snack’), and prolific (we’ll have them all season!).
Swiss chard is healthy as a member of the same family as spinach and beets. Equally nutritious cooked or raw. Great Swiss chard salad at http://www.lloydcraftfarms.com , recipe tab. Secret is how Swiss chard is cut (chiffonade- roll leaves and cut into thin shreds) and tenderized with an oil and vinegar dressing.
