Christmas is upon us…Yay! (But we still eat–right?)

Don’t get lost in the Christmas season.  More than anything this time of year we need to get those veggies–we’re going to have plenty of sweets and treats to offset with good nutrition and whole foods.  Eating healthy is simple; You don’t need to be a Chef to prepare your meal–steam, boil, broil, or eat raw…okay with Ranch dip–

Tuesday is the last day to assure you have a Special Box of local, organically raised veggies.  Order by email craftterri@rtconnect.net or text to 431-1219.  Pick Up Friday at Bee Healthy, 10:00 a.m. to 5:30 p.m.

This Week’s BOX– $25 (18 boxes left) Info Sheet with Recipes included–

  • 3# Rose Finn Apple Fingerling Potatoesno need to peel, just boil, and toss in seasonings with Olive Oil (15 minutes)
  • Yellow Cipollini Onion (Borettana is it’s proper name)wonderful caramelized, chop small to eat raw.
  • Deadon Savoy Cabbage2#-3# size (small for fall cabbage)–Recipe included
  • Red Beetsto make them easy, bake in the oven wrapped in foil like a potato, then cool and store in the fridge.  You can grate into a salad raw or cooked, recipe included for Harvard Beets (sweet and sour flavor with creamy butter)
  • 1# Carrotsgreat raw as carrot sticks, perfect grated into salads, or boiled with butter added.
  • 1/2# Sunchokessuper prebiotic (that which feeds your probiotics), eat in moderation as a raw snack, or roast in the oven with other root veggies–recipe included.
  • 2 Honey Bear Acorn Squashsweeter than most, smaller size for a small meal.
